Note that unlike sugar-based chikki, jaggery-based chikki is deeper in color, has a caramel-like sweetness, and added nutritional benefits due to the jaggery. It is a popular snack in Maharashtra, Gujarat, Madhya Pradesh, and many parts of North India.

 

Ingredients You’ll Need For Almond Chikki

Here are all the ingredients you need to make about 10 to 12 pieces of Almond Chikki.

  • 1 cup almonds: Whole or lightly chopped
  • ¾ cup jaggery: Preferably organic jaggery for the best flavor and texture. There are packaged jaggery powders available in the market – you can use them for a consistent texture and ease of preparation.
  • 1 teaspoon ghee
  • A pinch of cardamom powder (optional)
  • ½ teaspoon sesame seeds (optional)

  • Heavy-bottomed non-stick or cast-iron pan
  • Spatula or ladle
  • Rolling pin
  • Butter paper/parchment paper
  • Tray or flat surface

Step-By-Step Recipe: How To Make Almond Chikki With Jaggery

Roasting The Almonds

  1. Heat a pan on low to medium heat.
  2. Add almonds and dry roast them for four to five minutes until they turn lightly golden and aromatic.
  3. Remove them from the pan and let them cool.
  4. If you prefer smaller chunks in your chikki, you can chop them.

Preparing The Jaggery Syrup

  1. In the same pan, add a teaspoon of ghee and ¾ cup jaggery.
  2. Let the jaggery melt completely on low flame. Stir continuously.
  3. As it melts, it will start becoming glossy and thicker. It is during this process that you must check the consistency of the melting jaggery.

Testing The Consistency Of Melting Jaggery

  1. Drop a small amount of melted jaggery into cold water.
  2. If it hardens immediately and snaps cleanly when broken, it’s ready for the further process.
  3. If it’s still soft or sticky, cook for another 30 to 60 seconds.

Adding Almonds To The Syrup

  1. Once the syrup is ready, turn off the heat and immediately add almonds into the molten jaggery syrup.
  2. Mix quickly and coat them evenly with jaggery.

Make sure to mix and coat the almonds as fast as you can – the mixture begins to harden as it cools.

Setting The Jaggery-Almond Mixture

  1. Grease a flat surface like a tray with ghee.
  2. Place a butter paper sheet on top of the surface.
  3. Transfer the jaggery-almond mixture onto the tray.
  4. Place another sheet of butter paper on top of the mixture.
  5. Now, use a rolling pin to flatten and even out the mixture.

Cutting The Chikki Into Pieces

  1. Once flattened, let it rest for about a minute. This duration is enough for the mixture to slightly set.
  2. Use a sharp knife and cut the hardened mixture into square pieces – or any shape of your choice. You can cut it into diamonds or rectangles as well.
  3. Let the pieces cool completely before you separate them.

Storage Tips For Storing Almond Chikki

  • Once cooled, store your almond chikki in an airtight container.
  • Avoid refrigerating the chikki. It will build moisture and make the chikki sticky and soft.
  • The chikki can easily stay fresh for up to 2 to 3 weeks at room temperature.
