When you think of Ladakh, it’s easy to get swept away by its breathtaking landscapes – iconic spots like Pangong Lake, Tsomoriri, Nubra Valley, and the lively Leh Market often steal the spotlight. However, when it comes to food, many people’s minds quickly jump to momos and thukpa, overlooking the rich tapestry of Ladakhi cuisine waiting to be explored.
To change this perception, a mother-daughter duo launched Alchi Kitchen in Alchi, Ladakh, in 2016, dedicated to showcasing the true flavors of their homeland.
Their efforts have not only earned them the prestigious Nari Shakti Puraskar, India’s highest civilian honor for women, in 2019, but they also attracted attention from prominent figures like Rahul Gandhi, the Royal Family of Bhutan, and Bollywood stars such as Farhan Akhtar, Kunal Khemu, Tiger Shroff, Kriti Sanon and more.
Eager to dive into the essence of Ladakhi cuisine and excited to learn about the inspiring journey of Alchi Kitchen, unstumbled had the privilege of visiting Alchi and speaking with Nilza Wangmo, the owner and chef.

Back in 2023, I made my first trip to Ladakh, with Alchi on my must-visit list like so many other tourists. I had no idea that my visit would not only include prayers at the historic Alchi Monastery but also a delightful experience at Alchi Kitchen.
What truly caught my attention was the cozy home-style seating, both outdoors and indoors, the open kitchen, the farm-to-table concept, and the fact that the entire staff was made up of women. Fast forward to 2025, and I had the chance to return to Ladakh, which meant I had to revisit Alchi and interview Nilza Wangmo, the heart behind Alchi Kitchen.
Alchi Kitchen, founded in 2016 by Nilza and her mother, celebrates Ladakhi cuisine while empowering women through its all-female staff. I enjoyed hearing Nilza share her journey – from her initial dream of becoming an English teacher to studying economics and eventually starting the kitchen with her mom.
Reflecting on those early days, Nilza states, “It was our vision to bring Ladakhi cuisine into the mainstream dining experience.
We wanted to celebrate this unique food culture rather than just serve it. Until now, people could only find good Ladakhi dishes in homestays, often limited to just a few options. We decided to focus solely on local cuisine, which was initially a challenge. However, thankfully, it has been successful, and I hope it continues to grow.”
Exploring Authentic Ladakhi Cuisine At Alchi Kitchen
Ladakhi cuisine is a true delight for the senses, offering dishes that celebrate the ingredients without overwhelming them with excessive spices. Nilza, also an ambassador of Ladakhi culture and cuisine, emphasizes the distinctive flavors that define this culinary tradition.
“Our cooking may appear simple at first glance, but when you taste it, you can relish every ingredient,” she explains. “The cuisine feels warm and hearty, with a perfect balance of salt and spices, allowing each element to shine. We prefer to keep spices on the side, so diners can adjust according to their tastes.”
At Alchi Kitchen, guests can savor an array of traditional Ladakhi dishes, including Chutagi, a comforting pasta-and-vegetable stew, and Yarkandi Pulav, a flavorful rice dish. Other highlights include refreshing apricot juice and Khambir, a traditional bread.
Nilza encourages visitors to experience these flavors, stating, “You must try Yarkandi Pulav, apricot juice, and chutagi.” Each dish reflects the simplicity and richness of Ladakhi ingredients, creating a dining experience that is both authentic and memorable.
The Early Days Of Alchi Kitchen And The Stories Behind Its Recipes
Alchi Kitchen, founded in 2016 by Nilza and her mother, along with a small team of women, had one goal – to give Ladakhi cuisine the recognition it deserves. What started as a humble kitchen without any marketing efforts soon became a must-visit restaurant in Ladakh.
Despite facing initial challenges, Nilza expressed, “Oh my God. At first, it was really difficult, and I didn’t have any mentorship. However, as time has passed, I trained myself and the team, and now they have developed greater professionalism and confidence.”
Opening a restaurant in a rural area posed significant challenges. Nilza shared, “Initially, people didn’t take me seriously,” which she attributes to being a woman in a male-dominated field. Nevertheless, she was determined to pursue her vision.
Reflecting on the menu development, she added, “There were many sleepless nights… I visited the older generation and brought recipes from my grandmother and villages.”
It took a whole winter to curate the menu, with a strong emphasis on local traditions and flavors. The menu at Alchi Kitchen is a celebration of Ladakhi culture, with many dishes inspired by local family recipes.”
Awards And Honors
Nari Shakti Puraskar In 2019
Alchi Kitchen had a humble start with its share of challenges. Things began to change in 2019 when Nilza received the Nari Shakti Puraskar for her efforts in preserving Ladakhi cuisine and empowering local women through employment opportunities at her restaurant.
Reflecting on her journey, Nilza recalled, “I was overwhelmed when I learned about the nomination.
A visitor in 2018 suggested I should be nominated based on our conversation, and I later found out that someone from the Ministry of Women and Child Welfare had put my name forward. When I received the call confirming my nomination, my entire body was shaking with excitement, and I hugged my mother tightly with joy.”
Vogue Woman In Spotlight In 2020
In 2020, Nilza was celebrated as the Spotlight of the Year at the Vogue Women of the Year awards for her remarkable efforts in revitalizing Ladakhi cuisine and supporting local women’s empowerment. Following the passing of her mother in 2020, Nilza learned of her nomination for Vogue. She remarked, “I wasn’t entirely joyful because of my sorrow, but the online format of the event made it easier to handle.”
Alchi Kitchen: A Place Where Celebs and Travelers Meet
Alchi Kitchen has become a must-visit spot for travelers to Ladakh. Tourists flock to the region not only to explore the Alchi Monastery but also to dine at this beloved restaurant. Over time, the restaurant has grown in popularity, attracting Bollywood stars and politicians alike.
From celebrities like Kunal Kemmu and Kriti Sanon to Farhan Akhtar, Rahul Gandhi and more, they have all expressed their delight here. “They really like the cuisine and they just compliment you for the work you do,” Nilza shares, emphasizing her approach to hospitality: “I keep the profile of my kitchen or myself very low… it is just a local home house.”
What’s On the Cards For Alchi Kitchen
Alchi Kitchen may not have had an easy beginning, but it has grown into a remarkable establishment that embodies the essence of Ladakh. Over time, Nilza has expressed her dream of expanding Alchi Kitchen to Delhi, India, and California, USA, if all goes according to plan.
Her journey, along with her mother’s legacy, serves as a powerful reminder that extraordinary things can emerge from humble beginnings.
Rising from a small village in Ladakh to gaining national recognition, Alchi Kitchen’s story showcases that authenticity, sincerity, and a passion for sharing one’s culture can triumph over any challenges. This journey is a testament to the idea that when you pursue your dreams wholeheartedly, success will follow.
