As a muslim in Singapore, I was on the hunt for halal food options. The Springleaf Prata Palace proved to be a lifesaver. It is a chain restaurant that serves 100% halal-certified meals. My particular favorite was the chicken curry with coin prata. I was surprised to see that Singapore, too, had parathas, and it was a little different but equally tasty as the ones here at home.

My Jain friends on the trip found a similar lifesaver in places like Ananda Bhavan and MTR that serve Jain breakfast options. The idlis, dosas, and vadas are all very authentic. It is hard to even tell that these are not made in India. Indians in Singapore have indeed influenced the local cuisine quite a bit, which is every bit as fascinating as it is delicious.
